This easy Thai fish soup recipe comes from the family of Surachai and Jatupon, two sponsored brothers in Thailand. The boys love this soup, so their family makes it whenever they can afford the ingredients. The brothers love to go with their parents to the market to help choose which fresh fish to use.

Ingredients

  • 1 tbsp. cooking oil
  • 5 cherry tomatoes
  • ¼ red onion, sliced
  • 1 clove garlic, minced
  • 1 green chili pepper, seeded and chopped
  • salt to taste
  • 1 lb fish, such as salmon or catfish, cut into 1-inch chunks
  • 3 cups broth
  • scallions, chopped
  • fish sauce* to taste
*available at Asian markets and some supermarkets

Directions

  1. Combine tomatoes, onion, garlic, chili pepper and salt, and crush them into a paste using a mortar, blender or food processor. 
  2. Coat a saucepan with the oil, and heat over medium heat. 
  3. Add paste and fish. Stir, then add broth. Add scallions to pan. Add more broth if desired. 
  4. Reduce heat and let soup simmer about 15 minutes. Add fish sauce and serve.
