Mandazi

Call them African doughnuts or call them mandazi [mon-DAH-zee] — they’re scrumptious! Typically not as sweet as American doughnuts, they are usually unglazed and have a fluffy texture. Try this popular snack with a cup of tea.

Yield: 5 servings
Prep time: 15 minutes
Cook time: 30 minutes
Total time: 45 minutes

Ingredients

  • 1 egg, beaten
  • ½ cup sugar
  • ½ cup milk
  • 2 tbsp. butter, melted
  • 2 tsp. baking powder
  • 2 cups white flour
  • ½ cup cooking oil, plus more as needed
  • powdered sugar for sprinkling (optional)

Directions

  1. Mix together egg, sugar, milk, butter and baking powder. Slowly mix in flour, forming a dough that’s soft but not sticky. Add more flour if needed.
  2. With a rolling pin, roll dough on a lightly floured surface until about ¼-inch thick. Let stand about 20 minutes, then cut into 12-15 triangles.
  3. In skillet, heat oil over medium heat. Place triangles in oil and fry until both sides are golden brown. Remove to drain on paper towels. Sprinkle with powdered sugar.
  4. Eat warm or cool.
