Thai Omelet

In Thailand, most omelets don’t include cheese, and they’re often served on top of rice.

Thai Omelet

 2 eggs
 2 tbsp cooking oil
 1 tsp fish sauce (found in the Asian section of many grocery stores)
 ½ cup rice, cooked according to package directions
 Sriracha, a spicy Thai sauce, or ketchup (to keep it mild)

Crack the eggs into a bowl. Add the fish sauce. With a whisk or fork, beat the egg mixture quickly for about 1 minute.

Heat the oil in a pan over medium heat. Pour the egg mixture into the pan and cook about 20 seconds, or until the edges start to firm up. Use a turner to flip the omelet over and cook about 20 seconds more, until just golden brown.

Serve the omelet on top of the rice, and add as much hot sauce or ketchup as you like.
