Baked Yams

Children in Ghana like to eat yams for lunch. Yams are often fried, but this healthier version is baked. Try them with ketchup, just like Ghanaian [gah-NAY-en] children do.

Ingredients
  • 2-3 yams
  • 3 c. water
  • 3 tbsp. salt
  • vegetable oil
  • ground pepper (optional)
  • onion powder (optional)
  • ketchup (optional)

Directions
  1. Preheat your oven to 375 degrees.
  2. Peel the yams.
  3. Cut the yams into ¼ inch slices. For fun, cut them into circles or squares.
  4. Mix the water and salt in a large container.
  5. Add the yam slices to the water and salt mixture. Soak the slices for 30 minutes.
  6. Once the yam slices have finished soaking, dry them well, toss with oil, and sprinkle with pepper and onion powder.
  7. Bake the slices in the oven for about 20 minutes, take them out, flip them over, and bake for another 15-20 minutes until they are brown and crispy. Enjoy!
